Italian Gold

What is your favorite comfort food?? Mine is definitely homemade Escarole & Beans! Whenever my husband is out of the house for dinner, this is my staple- he still hasn't learned... he's missing out!

Ingredients:
*Escarole (beware it shrinks to nothing, so I suggest 2-4 heads depending on how many people are eating) Chopped or ripped into smaller pieces.
*Cannellini Beans (1-2 cans)
*Olive Oil
*Garlic (chopped)
*Chicken Stock/Base 
*Optional- ham hock to add flavor when cooking, but remove before serving

Directions- Drizzle oil in a pan and add garlic. Saute garlic until lightly brown, add some chicken stock and cook a minute. Add escarole and cover. Cook over medium heat, stirring every few minutes until wilted and cooked to how you want- I like it mooooooshy! Add beans once your escarole has started to wilt. Turn off heat, add grated cheese and mix. 
This is delicious as a side or a meal. I usually enjoy it with a nice crunchy piece of bread, a glass of wine and MANGIA!!!
